Choco Mocho Cake

Ingredients for the cake:

  • 9 eggs
  • 9 tablespoons of white sugar
  • 9 tablespoons of nesquik
  • 3 tablespoons of malted butter or oil
  • 9 tablespoons of all-purpose flour
  • 30g of baking powder

Ingredients for the 1. filling:

  • 700g of sour cream
  • 300g of ground biscuits
  • 250g of icing sugar
  • 3 tablespoons of whipped cream

Ingredients for the 2. filling:

  • 500g of whipped cream

Also 4dl of chocolate milk and 2 tablespoons of whipped cream

 

How to prepare your cake:

Beat 3 egg whites with 3 tablespoons of sugar, add egg yolks one at a time, and continue to whisk and add 1 tablespoon of oil and 3 tablespoons of Nesquik. 3 tablespoons flour mix with 10g baking powder and add to the previous mixture slowly, stirring with a wooden spoon. Pour into a greased baking sheet and bake in a preheated oven at 200 degrees for 15 minutes. Make 2 more cakes the same way. When they are cool   pour each cake whit chocolate milk.

For the first filling whip a  wooden spoon 700g of sour cream with 250g of icing sugar and 300 g of ground biscuits.

Put 1 cake layer and caver it whit 1/3 of the 1. filling and 1/3 of the 2. one. Continue with this order until you are done. Ice the cake whit the 2 tablespoons of whipped cream.

Decoration as desired.

Simple Pancakes

Ingredients:

  • 3/4 cup of milk
  • 1 cup of all-purpose flour
  • 2 tablespoons of white sugar
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1 large egg
  • 2 tablespoons of melted butter(or 2 tablespoons of oil)

How to prepare your pancakes:

Combine all of your dry ingredients. Then separate your egg yolks from the egg whites, beat the egg whites until nice and fluffy (until  they hold stiff peaks). Then fold them gently into the batter. Add remaining ingredients and stir only until mixed.

Preheat your skillet and brush it lightly whit oil or butter. Pour pancake batter onto hot skillet. Flip once when bubbles begin to form along the edges. When they are  lightly browned on both sides, remove pancake using a spatula.

Moringue

Ingredients:

  • 5 big egg whites
  • 300g of sugar
  • 5-10g vanilla sugar
  • a pinch of salt

How to make you Moringue:

First, preheat your oven to 150°C. Then put all of the egg whites in a large bowl and whit a electric mixer mix it on a low speed. After 2 minutes start putting the sugar a little bit at the time. Also in that mix the salt and the vanilla sugar and switch to the medium speed. After 2-3 more minutes switch to the high speed. It is important  to be patient whit it. Mix it until nice and fluffy. You know when it is done, when you turn your bowl and the mix doesn’t move. Bake it for 30/40 minutes. When its done let them to cool.

Carrot cake

Ingredients for the Cake:

  • 300g of grated carrots(about 4 small carrots)
  • 1 1/2 cups of flour
  • 1 1/2 teaspoons of baking powder
  • 1/2 teaspoons of ground cinnamon
  • 3 eggs
  • 3/4 cup of brown sugar
  • 3/4 cup of vegetable oil
  • 1 teaspoon of vanilla extract

Ingredients for the Frosting:

  • 250g of soft cream cheese
  • 1/2 cup of icing sugar (powdered sugar)
  • 1 teaspoon of vanilla extract

How to make your cake:

In a large bowl sift your flour, baking powder and ground cinnamon. In a another bowl add your eggs, brown sugar, vanilla extract and  vegetable oil, mix it until its all combined. Then add it in the flour mixer you already made and stir it all together. Put your grated carrots in to the mixer and stir it.

Preheat your oven to 170ºC . Put your mixer into your greased  cake tin and bake it for about 1 hour. When your cake is done let it cool before you put some frosting or powdered sugar(as in the picture).

How to make your frosting:

In a bowl mix your cream cheese, icing sugar and vanilla extract until nice and light. Then spread your frosting on your cake and then it’s ready for you to serve.

Easy Vegan Brownies

Dry  Ingredients:

  • 2 cups of flour
  • 2 cups of sugar
  • 3/4 cup of unsweetened cocoa powder
  • 1 teaspoon of baking powder
  • 1 teaspoon of salt

Wet  Ingredients:

  • 1 cup of water
  • 1 cup of vegetable oil
  • 1 teaspoon of vanilla extract

 

How to prepare your Brownies:

Preheat your oven to 350ºF/170ºC. Mix all of your dry ingredients,then mix the wet ingredients and then combine the wet and dry ingredients. If you like you can put some vegan chocolate and even some nuts into the batter. Coat your pan whit some coconut or vegetable oil and pour the batter evenly into the pan. Bake it for 25-30 minutes.

Halloween Candy Corn Cupcakes

The Cupcake Recipe:

125g caster sugar
125g self raising flour
2 large free range eggs
125g unsalted butter
¼ teaspoon of bicarbonate of soda
1 ½ tablespoons of milk
¼ teaspoon of vanilla extract

Buttercream Icing:

335g icing sugar
150g unsalted butter
1- 2 tablespoons of whole milk
¼ teaspoon of vanilla extract


How to prepare your Cupcakes:

Step 1:  First you have to set your oven to 170C. Then put your room temperature butter, sugar, flour, two eggs,¼ teaspoon of bicarbonate soda and 1 ½ tablespoons of milk in a large bowl. Mix them with a mixer on a low and then on a medium speed!

Step 2:  Line your cupcake tin whit your cupcake cases and fill them half way whit the mix. Put your cakes in the oven for around 20 minutes, when they look a little brown on the top. When they are done it is important to let them cool  completely!

How to make the Buttercream Icing:

Step 1: Put your butter in a bowl and beat it for around 5 minutes, until it turns in to a whitish color! When its nice and creme its time to add  the icing sugar,sift it in add it slowly! Mix it on a low speed. When its creme add your milk and vanilla extract.Mix it on a low speed and then slowly speed up.

Step 2:  Separate your icing in three separated bowls. In one bowl put a little of yellow food coloring, in a second one orange and the third one will be the white top of the candy.

Step 3:  Put your icing in the 3 separated bowls and pipe them one at a time on your cupcakes. When your done you will have 12 nicely made Halloween cupcakes.
