Carrot cake


Ingredients for the Cake:

  • 300g of grated carrots(about 4 small carrots)
  • 1 1/2 cups of flour
  • 1 1/2 teaspoons of baking powder
  • 1/2 teaspoons of ground cinnamon
  • 3 eggs
  • 3/4 cup of brown sugar
  • 3/4 cup of vegetable oil
  • 1 teaspoon of vanilla extract

Ingredients for the Frosting:

  • 250g of soft cream cheese
  • 1/2 cup of icing sugar (powdered sugar)
  • 1 teaspoon of vanilla extract

How to make your cake:

In a large bowl sift your flour, baking powder and ground cinnamon. In a another bowl add your eggs, brown sugar, vanilla extract and  vegetable oil, mix it until its all combined. Then add it in the flour mixer you already made and stir it all together. Put your grated carrots in to the mixer and stir it.

Preheat your oven to 170ºC . Put your mixer into your greased  cake tin and bake it for about 1 hour. When your cake is done let it cool before you put some frosting or powdered sugar(as in the picture).

How to make your frosting:

In a bowl mix your cream cheese, icing sugar and vanilla extract until nice and light. Then spread your frosting on your cake and then it’s ready for you to serve.
